Monk’s Café is pleased to welcome Dan & Taylor Suarez of Suarez Family Brewery on Tuesday, March 31, 2026 at 5pm for an casual hang in our cozy back bar. Dan is one of the best brewers in the world; no one makes clean beer, or country beer, like him. We are honored to have Dan & Tay visit – don't miss this! ***On Draft*** Suarez Big Night Country Pale Ale (5.6% abv) – Mixed fermentation country ale inspired hoppy, yeast-driven ales of Belgium. Oak-aged for about a year, then dry-hopped with dose of fruity American hops just before bottling. Dan’s tasting notes: “citrus punch, kiwi, and tangy orange character”. Suarez Kinda Classic Saison (4.5% abv) – “Belgian-inspired refresher brewed with a single strain of eccentric yeast of Belgian origin, cellared patiently. A very simple beer made with care, attention to detail and patience. Subdued amounts of classic Belgian spice, earthy, lemony, a healthy dose of bergamot/earl gray, with an underlying pilsner malt character." Suarez Palatine Pils (4.9% abv) – My favorite American-brewed Pilsner. This is such a treat to have on draft this week. Do not sleep on this – enjoy while we have it. Suarez Triangular Nature (5.2% abv) – Country beer brewed with un-malted buckwheat sourced from the Hudson Valley area. “This batch exhibits notes of persimmon, fresh bay leaf, kumquat, preserved lemon and orange blossom honey with a fresh acidity”. ***In Bottles – limited inventory*** Suarez 100 Feet North (4.3% abv) – SFB’s signature country beer that serves as the base for almost all of their fruited beers. Dan’s tasting notes: “Lemon peel, Asian pear, cactus fruit, honeydew, yellow gatorade, sandalwood, white cherry and white cranberry juice." 500ml Suarez Backroads (5.6% abv) – Sumac country beer with tangerine marigold. Every batch I’ve had has been amazing. Dan’s tasting notes: “Sour orange, creamsicle, salty sports drink, unripe apricot, fermented pineapple, spruce tips, and a touch of oak." 500ml Suarez Big Night (5.6% abv) – Mixed fermentation country ale inspired hoppy, yeast-driven ales of Belgium. Oak-aged for about a year, then dry-hopped with dose of fruity American hops just before bottling. Dan’s tasting notes: “Citrus punch, kiwi, and tangy orange character." 500ml Suarez Proclivity (5.4% abv) – Country beer brewed with fresh pineapple sage (Foxtrot Farm & Flowers). Dan’s tasting notes: “Spicy, herbal, and softly funky with beautiful notes of clemetine and candied pineapple balance by a clean, delicate acidity." 500ml ***Cans Available for In-House or Takeaway*** Suarez Amenable Bitter (4.2% abv) – Dan’s take on a classic English-style Bitter. Brewed with Enlish malts, lightly cooked invert sugar, Challenger and Goldings hops and fermented with a classic UK derived yeast. The cans have a small dose of nitrogen to approximate a traditional hand-pulled English Bitter. Suarez Palatine Pils (4.9% abv) – This is my favorite American brewed Pilsner. Perfectly balanced, plush mouthfeel, hoppy-forward aroma and a crisp finish – or as Dan says – “clean snappiness.”
